Diplomats and world leaders are at the United Nations climate change summit this week in Baku, Azerbaijan. They need to figure out how to raise trillions of dollars to help smaller countries cope with the effects of rising global temperatures. We don’t have a seat at that big table, but we do have a seat at our kitchen tables and that’s one place where we can make a difference.

Choose to eat more plant-based foods. They have a lower environmental impact than animal products. Meat production is resource intensive and contributes heavily to greenhouse gas emissions, especially methane. Growing vegetables, grains, legumes and fruits requires far fewer resources and produces less pollution.

Eating vegetarian also helps reduce carbon emissions from food transportation. Meat is often transported long distances but many plant based foods can be grown locally.
